Gnocchi is a traditional Italian pasta dish made from all-purpose flour and potatoes. This simple yet tasteful dish includes freshly made gnocchi and a rich and tasteful tomato sauce. The dish is a simple, elegant Italian classic. It is easy to make and is jam-packed with flavor.

1 Step

For The Gnocchi : Start by washing and scrubbing the potatoes to get rid of the dust and debris. In a pot, add water and potatoes. Place it on medium heat and let the potatoes boil. Once the potatoes are tender, take them out of the water, let them cool for a while and remove the skin by peeling. Using a potato masher or ricer, mash the potatoes and place them in a large bowl. Mount all-purpose flour and salt on a workstation or flat surface. Make a well in the middle using your fingers. Add mashed potatoes in the middle and crack an egg on top. Mix the ingredients using your fingers and hands until you get a soft dough. Knead the dough enough so that it doesn’t stick to your fingers. Don’t over knead it. Portion the dough into small pieces. Using your hands, roll each dough until you get ropes of equal thickness. Cut it into ¾ to 1-inch pieces using a sharp knife. Slide each dough piece gently on the fork so that it gets three lines pattern. Make sure you don’t squeeze it hard. Sprinkle flour on them and toss so that they don’t stick together. Let it rest for about 20 minutes.

2 Step

For The Sauce : Meanwhile, place a large saucepan over medium heat. Add olive oil and let it heat for a minute. Add minced garlic, tomatoes, dried oregano, dried basil, hot pepper flakes and salt. Mix well. Pour in water and mix well. Cover the saucepan with lid halfway and let it simmer for about 5 to 10 minutes or until it thickens.

3 Step

Assembly : Just as the sauce is simmering away, pour water into a large pot and place it on medium heat. Add salt. Once the water starts to boil, add gnocchi and let it boil. Once the gnocchi is thoroughly cooked, it will float on top. Drain the gnocchi and add it directly to the tomato sauce. Add about 1 to 2 tablespoons of pasta water and let it simmer for about 30 minutes. Stir gently. Take the gnocchi out on a serving plate, top it up with freshly grated parmesan cheese. Enjoy!
