Marinated Cucumber and tomato salad is a nutritious addition to a summer diet. The cucumbers and onion are so deliciously crunchy that you won’t be able to stop eating them, and the tomatoes are so juicy and sweet that they burst in your mouth.

This recipe is fantastic as to consider it a light summer snack, but it also works well as a side dish at a barbeque or as a salad topper. Make a huge batch of this and store it in the refrigerator. It’ll vanish in a flash.

This marinated salad is a delicious and healthful way to enjoy fresh summer vegetables, and it’s easy to personalize. For a little extra flavor, throw in some fresh herbs or feta cheese. For a more flavorful alternative, use seasoned pepper, which has been enhanced with additional ingredients, instead of plain ground pepper.

Is it possible to replace the sugar with a sweetening substitute?

Yes, you certainly can. Just make the necessary adjustments. Each sugar substitute has a different measurement.

Is it okay if I skip the onion?

I would leave the onion in the recipe even if you don’t like it. It really enhances the overall flavor of the dish. If you can’t stand onions, you can obviously leave them out.

Is this a healthy option?

Yes, it is. All ingredients used in the recipe are healthy. During the summer, cucumbers are plentiful and inexpensive. If you have a vegetable garden, you almost certainly have more than you can use. Cucumbers are also extremely low in calories and contain a lot of water. During the heat, they’re a terrific way to stay hydrated and satiated.

What fresh herbs could I use instead?

Other tasty options are fresh oregano and fresh parsley.

Is it okay if I use dried basil?

It is not something I would suggest. If you use fresh ingredients, the salad will taste even better.

Is it possible to dice the marinated cucumber and tomatoes to make them smaller?

Yes. This is an old classic southern tomato salad dish that we’ve always sliced up the same manner. Naturally, if you prefer smaller portions, dice it up as desired.

What is the best way to store leftovers?

It’s preferable to consume this salad within the first two or three days. It will last up to 5 days in the fridge if stored in an airtight container. And, in case you’re wondering, no, you can’t freeze it.
