  • 32 ounces frozen french fries (or 8 cups homemade french fries)
  • 1 ½ cups shredded cheddar cheese
  • 3 tablespoons cooked and crumbled smoked beef bacon (or real bacon bits)
  • 1 cup brown gravy (homemade or packet, optional)
  • ½ cup sour cream
  • 2 green onions (thinly sliced)

  • Preheat the oven to 425°F (or cook fries in the air fryer per directions in the notes).
  • Add the fries to a rimmed baking sheet and cook for 25-30 minutes or until extra crisp, stirring after 15 minutes.
  • Once the fries are crisp, remove them from the oven and turn the broiler on to 500°F.
  • Top the fries with cheddar and smoked beef bacon and place back into the oven for 1-3 minutes or until the cheese is melted. The broiler's intense heat is ideal for this; it melts the cheese quickly without making the fries underneath soggy.
  • Top with green onions. If using, drizzle with brown gravy and top with sour cream. Serve immediately. I recommend serving these loaded fries as soon as they're ready for the best flavor and texture.

Notes

Leftover loaded fries are best enjoyed immediately, but if you find yourself with extras, I've discovered a trick to revive their crispness. Store them in an airtight container in the refrigerator and reheat them in a preheated oven at 350°F for about 5-7 minutes. This will help re-crisp the fries without making the cheese rubbery.
